Ingredients

  • 3 1/2 c. cake flour
  • 2 c. sugar
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1 c. vegetable oil
  • 3 eggs, slightly beaten
  • 2 c. chopped ripe bananas
  • 1 c. chopped pecans
  • 1 1/2 tsp. vanilla
  • 1 (8 oz.) can crushed pineapple in juice (undrained)

Method

  • Heat oven to 350°; grease and flour 3 round pans, 9 x 1 1/2-inch.
  • Mix flour, sugar, baking soda, salt and cinnamon in a large bowl; add oil and eggs.
  • Stir until all dry ingredients are moistened (do not beat).
  • Stir in bananas, pecans, vanilla and pineapple.
  • Divide batter evenly among pans.
  • Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans.
  • Cool completely on wire rack. Fill layers and frost side and top of cakes with Cream Cheese Frosting.
  • Sprinkle 1/2 cup pecans on top of cake.
  • Refrigerate any remaining cake.
