- 3 1/2 c. cake flour
- 2 c. sugar
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1 c. vegetable oil
- 3 eggs, slightly beaten
- 2 c. chopped ripe bananas
- 1 c. chopped pecans
- 1 1/2 tsp. vanilla
- 1 (8 oz.) can crushed pineapple in juice (undrained)
Method
- Heat oven to 350°; grease and flour 3 round pans, 9 x 1 1/2-inch.
- Mix flour, sugar, baking soda, salt and cinnamon in a large bowl; add oil and eggs.
- Stir until all dry ingredients are moistened (do not beat).
- Stir in bananas, pecans, vanilla and pineapple.
- Divide batter evenly among pans.
- Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans.
- Cool completely on wire rack. Fill layers and frost side and top of cakes with Cream Cheese Frosting.
- Sprinkle 1/2 cup pecans on top of cake.
- Refrigerate any remaining cake.
