Ingredients

  • 2 whole Ripe Bananas
  • 1 can Pineapple Chunks (20 Oz Size)
  • 1/4 cups Coconut Milk
  • Rum (optional)

Method

  • Cut the banana into chunks and place in a large, flat-bottomed, freezer-safe container. Pour the pineapple on top. Cover and freeze for 3-4 hours until completely frozen.
  • Scoop out the frozen fruit and place in a blender or food processor. Add in coconut milk and blend until smooth. At this point you have some options: You can add some rum to this mixture, pour in a glass, stick in a straw and enjoy. Or you can drink it without the rum. Or you can put it back in the container and freeze until more solid, scoop it and serve it like sorbet. It's a versatile dessert.
