Ingredients

  • 1 yellow cake mix
  • 1 pkg. instant vanilla pudding
  • 1 (8 oz.) cream cheese
  • 1 (9 oz.) Cool Whip
  • 1 (15 oz.) can crushed pineapple, drained (save juice to use in cake mix)
  • 1/2 c. chopped cherries
  • 1/2 c. chopped nuts
  • 1/2 c. coconut

Method

  • Mix cake mix as directed.
  • Use reserved juice.
  • Grease large cake pan, 9 x 13-inch, that has edges.
  • Pour cake batter into prepared pan.
  • Bake 15 to 20 minutes until done.
  • Let cool.
  • Mix pudding mix with 1 cup milk.
  • Beat cream cheese into pudding mix. Fold by hand the Cool Whip into the mixture. Spread mixture onto cool cake. Sprinkle pineapple on top of pudding, then chopped cherries, nuts and coconut.
  • Refrigerate until ready to use.
