Ingredients

  • Parmesan cheese As needed
  • parsley As needed micro
  • 3 onions small diced
  • 1 head garlic minced
  • salt To taste
  • chili flakes To taste
  • 4 pounds tomatoes canned
  • basil As needed, chopped
  • 1/4 cup olive oil
  • 1 cup pork stock
  • 1 1/2 pounds ground pork
  • 1/2 cup ricotta cheese
  • 2 tablespoons thyme
  • 2 tablespoons garlic minced
  • 1/4 cup panko bread crumbs
  • salt To taste
  • pepper To taste
  • 1 1/2 pounds pig skin scraped
  • 3 tablespoons salt
  • 6 quarts water

Method

  • 1. For the noodles: Braise the pig skin in salted water until tender, cool and press over night. Cut into desired noodle shape
  • 2. For meatballs: Combine all ingredients and form small balls, saute on medium high heat for 3 minutes on each side
  • 3. For the sauce: Sweat the onions until translucent, add the garlic and cook until fragrant. Add remaining ingredients and simmer for 40 minutes, remove and blend in a Vitamix
