Ingredients

  • 18 ounces yellow cake mix
  • 4 eggs
  • 12 cup margarine, softened
  • 11 ounces mandarin oranges
  • 1 teaspoon vanilla extract
  • 1 (20 ounce) can crushed pineapple
  • 3 12 ounces vanilla instant pudding mix
  • 12 cup confectioners' sugar
  • 4 ounces whipped topping

Method

  • Combine cake mix, eggs, margarine, mandarin oranges and vanilla in mixer bowl.
  • Beat for 4 minutes.
  • Pour into greased and floured 9x13-inch pan.
  • Bake at 350 for 25 to 30 min or until cake tests done.
  • Drain pineaple, reserving juice.
  • Blend reserved juice and pudding mix in bowl.
  • Mix in confectioners' sugar.
  • Stir in pineapple.
  • Fold in whipped topping.
  • Spread over cooled cake.
  • Chill in refrigerator.
