Ingredients
- 10 to 12 potatoes
- 1 1/2 c. sharp Cheddar cheese
- 3 oz. cream cheese
- 2 sticks margarine
- 2 onions, finely diced
- 1/2 lb. bacon
- 1 lb. pkg. lasagne noodles
Method
- Fry bacon.
- When almost done, drain off grease and add butter, melted.
- Saute onions with bacon and set aside.
- Cook lasagne noodles and drain.
- Cook potatoes; drain.
- Then mash smooth.
- Add cream cheese and Cheddar cheese to mashed potatoes, mixing well. Add half of bacon, onion and butter mixture to mashed potatoes, mixing well.
- Butter a 13 x 9 x 2-inch baking dish.
- Layer noodles, then potato mixture.
- Repeat, ending with lasagne noodles.
- Pour remaining butter and onion mixture over all.
- Cover with foil. Bake at 350° until heated through.
