Ingredients

  • 10 to 12 potatoes
  • 1 1/2 c. sharp Cheddar cheese
  • 3 oz. cream cheese
  • 2 sticks margarine
  • 2 onions, finely diced
  • 1/2 lb. bacon
  • 1 lb. pkg. lasagne noodles

Method

  • Fry bacon.
  • When almost done, drain off grease and add butter, melted.
  • Saute onions with bacon and set aside.
  • Cook lasagne noodles and drain.
  • Cook potatoes; drain.
  • Then mash smooth.
  • Add cream cheese and Cheddar cheese to mashed potatoes, mixing well. Add half of bacon, onion and butter mixture to mashed potatoes, mixing well.
  • Butter a 13 x 9 x 2-inch baking dish.
  • Layer noodles, then potato mixture.
  • Repeat, ending with lasagne noodles.
  • Pour remaining butter and onion mixture over all.
  • Cover with foil. Bake at 350° until heated through.
