Ingredients

  • 15 lb. cucumbers, sliced for pickles
  • 3/4 c. salt
  • 1 gal. water
  • alum
  • 5% vinegar
  • spices (1/2 can pickling spices or to taste)
  • 3 c. sugar

Method

  • Soak cucumbers in solution of 3/4 cup salt to 1 gallon of water. Soak for 7 days. Drain and wash pickles and container. Cover with alum mixture (3 tablespoons alum to 1 quart water). Soak 24 hours, then drain and wash. Cover with vinegar and spices. Soak 24 hours. Drain and layer 3-inches of pickles and 3 cups sugar. Repeat layers.
