Ingredients
- 1 gal. beets (medium size)
- 2 c. sugar
- 1 1/2 tsp. salt
- 2 sticks cinnamon
- 1 Tbsp. allspice
- 3 1/2 c. vinegar
- 1 1/2 c. water
Method
- Wash beets.
- Cut tops, leaving part of stems (about 1 1/2-inches) to retain color.
- Boil until soft and peel while still warm.
- Place in pint jars.
- Boil all other ingredients and pour over beets and seal.
- Boil lids.
