- 1 medium whole egg
- 2 egg whites
- 1 c. apple juice
- 1 c. skim milk
- 1 Tbsp. vegetable oil
- 1 Tbsp. vanilla
- 1 tsp. cinnamon
- 1 c. all-purpose flour
- 1 c. whole wheat flour
- 4 tsp. baking powder
- 2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. brown sugar
- 2 c. chopped, unpeeled Red Delicious apples
- 1 c. oatmeal
- 1 lemon zest, grated
Method
- Preheat oven to 350°.
- Combine wet and dry ingredients separately.
- Fold together until blended.
- Spoon into paper cup liners in a muffin pan and bake for 25 minutes.
- Yields about 23 muffins, 2 ounces each.
