Ingredients

  • 1 cup mayonnaise
  • 3 1/2 tablespoons Parmesan cheese
  • cooking spray
  • 2/3 cup green onions chopped
  • 3 1/2 tablespoons lemon juice
  • 1 garlic clove minced
  • 3/4 teaspoon dried tarragon
  • 8 chicken breasts halved skinned, boned
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 16 sheets phyllo pastry

Method

  • Combine first 5 ingredients and set aside. Sprinkle chicken with salt and pepper. Place 2 sheets of phyllo on a sheet of plastic wrap, spray each with cooking spray. Spread about 3 tablespoons of mayonnaise mixture on both sides of chicken; place breast diagonally on one corner of stacked sheets. Fold sides over and carefully roll up pastry.
  • Place seam side down on ungreased jelly roll pan. Repeat with rest of chicken. Spray tops with cooking spray. Sprinkle with Parmesan cheese. Bake at 350 degrees for 40-45 minutes or until chicken is done. Serve immediately.
