Ingredients

  • 1 large can whole tomatoes
  • 1 can pitted black olives
  • 1 small chopped onion
  • 1 to 2 tsp. chili powder
  • 1 tsp. Italian seasoning
  • 1 Tbsp. sugar
  • 1 or 2 bay leaves
  • 4 to 8 c. cooked rice (either regular or Minute)
  • sour cream (optional)

Method

  • Crush tomatoes and return to juice.
  • Place all ingredients, except rice, in large pot.
  • Bring to a boil, then simmer, covered, for 30 minutes.
  • Cook rice according to package directions.
  • When sauce and rice are cooked, mix them together in a large bowl.
  • Top with a little sour cream, if desired.
