Ingredients

  • 1 cup heavy cream
  • 1 cup milk
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar
  • 4 None egg yolks + 1 whole egg
  • None None strawberries, to serve

Method

  • Preheat oven to 300°F.
  • Heat cream, milk, vanilla and sugar in a saucepan over medium heat, until mixture is just simmering. Remove from heat, cover and set aside for 15 mins to infuse.
  • Whisk together egg yolks and whole egg. Whisk in hot cream mixture then strain. Distribute between six 8.5 oz ramekins. Place in a roasting pan and add enough boiling water to come halfway up the side of ramekins. Cover with parchment paper. Bake for 12-20 mins, until just set. Turn off oven. Let cool in oven for 30 mins.
  • Remove from oven and let cool completely. Serve with strawberries.
