Ingredients
- 2 1/2 qt. milk
- 1 c. long grain rice, washed
- 3/4 c. sugar
- 3 eggs, beaten
- vanilla to taste
- 3/4 c. sugar
- 1 c. milk
Method
- Put rice, milk and 3/4 cup sugar in a large pot.
- Cook over medium-high heat, stirring occasionally.
- When mixture has boiled, lower heat and continue to cook (uncovered), stirring constantly for about an hour or until rice is soft.
- Beat the eggs in bowl. Add 1 cup milk, 3/4 cup sugar and vanilla to taste.
- Beat.
- Ladle small amount of rice mixture into egg mixture.
- Stir.
- Pour this back into pot; raise temperature to high and continue stirring until boiled.
- Turn off heat.
- Pour into glass casserole dish or 13 x 9 x 2-inch pan.
- Cool at room temperature, then refrigerate.
