Ingredients

  • 2 1/2 qt. milk
  • 1 c. long grain rice, washed
  • 3/4 c. sugar
  • 3 eggs, beaten
  • vanilla to taste
  • 3/4 c. sugar
  • 1 c. milk

Method

  • Put rice, milk and 3/4 cup sugar in a large pot.
  • Cook over medium-high heat, stirring occasionally.
  • When mixture has boiled, lower heat and continue to cook (uncovered), stirring constantly for about an hour or until rice is soft.
  • Beat the eggs in bowl. Add 1 cup milk, 3/4 cup sugar and vanilla to taste.
  • Beat.
  • Ladle small amount of rice mixture into egg mixture.
  • Stir.
  • Pour this back into pot; raise temperature to high and continue stirring until boiled.
  • Turn off heat.
  • Pour into glass casserole dish or 13 x 9 x 2-inch pan.
  • Cool at room temperature, then refrigerate.
