Ingredients

  • 2 1/4 lb floury potatoes, peeled, cut into 1 inch pieces
  • 3 1/2 tbsp butter, softened
  • 3/4 cup hot milk

Method

  • Place potatoes in a medium saucepan and cover with cold water. Bring to a boil and cook over medium heat for 15 mins, or until tender. Drain.
  • Using the back of a wooden spoon, push potatoes through a fine-mesh sieve into a large bowl. Use spoon to stir in butter and hot milk, folding gently until mashed potatoes are smooth and fluffy.
