Ingredients

  • 1 head of torn greens-any will do
  • one orange-sectioned without membrane
  • 2 sliced scallions
  • 2 or 3 tablespoons of lightly toasted slivered almonds
  • 1/2 sweet red pepper cut into 1 inch pcs.
  • 1/4 cup crumbled feta (pref. goats milk feta)
  • 1/2 bulb of thinly sliced fennel bulb
  • 3 tbls olive oil
  • 1 tbls seasoned rice vinegar(the one with sugar)
  • salt and pepper to taste

Method

  • mix together and serve.
  • Great with a piece of grilled chicken or really any kind of meat or fish.
  • the olive oil/ vinegar quantities should be done to taste.
