Ingredients

  • 3 c. flour
  • 1 c. sugar
  • 1/2 c. shortening
  • 1/2 tsp. salt
  • 1 c. dark molasses (light for a milder taste)
  • 1 tsp. baking soda
  • 1 1/2 c. boiling water

Method

  • Mix flour, sugar, shortening and salt.
  • Take out 1 cup of mixture; set aside for topping.
  • Combine molasses, baking soda and water; add to dry ingredients.
  • Divide mixture between two 8-inch unbaked pie shells.
  • Top with reserved crumb topping (1/2 cup for each pie).
  • Bake at 350° for 1 hour, or until toothpick inserted in center comes out clean.
