- 2 1/4 c. cake flour
- 1 1/2 c. sugar
- 3/4 c. shortening
- 3/4 c. milk
- 3 eggs
- 2 1/2 tsp. baking powder
- 1 tsp. salt
- 1 tsp. vanilla extract
- 1 1/4 c. light corn syrup
- 2 egg whites
- dash salt
- 1 tsp. vanilla
Method
- Preheat oven to 375°.
- Prepare two 9-inch cake pans.
- In large bowl beat first 8 ingredients with mixer at low speed.
- Then beat at medium for 5 minutes.
- Pour into pans and bake approximately 25 to 30 minutes.
- Over medium heat, heat syrup to boiling.
- Beat egg whites to soft peaks.
- Slowly pour in hot syrup, beating until mixture is fluffy.
- Add salt and vanilla.
- Ice cakes and sprinkle with coconut.
