Ingredients

  • 2 1/4 c. cake flour
  • 1 1/2 c. sugar
  • 3/4 c. shortening
  • 3/4 c. milk
  • 3 eggs
  • 2 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. vanilla extract
  • 1 1/4 c. light corn syrup
  • 2 egg whites
  • dash salt
  • 1 tsp. vanilla

Method

  • Preheat oven to 375°.
  • Prepare two 9-inch cake pans.
  • In large bowl beat first 8 ingredients with mixer at low speed.
  • Then beat at medium for 5 minutes.
  • Pour into pans and bake approximately 25 to 30 minutes.
  • Over medium heat, heat syrup to boiling.
  • Beat egg whites to soft peaks.
  • Slowly pour in hot syrup, beating until mixture is fluffy.
  • Add salt and vanilla.
  • Ice cakes and sprinkle with coconut.
