Ingredients
- 1 1/2 c. light corn syrup
- 1/2 c. sugar
- 1/4 c. butter or margarine
- pastry for single crust pie
- 1 c. pecan halves
- 3 slightly beaten eggs
- 1 tsp. vanilla
- dash of salt
Method
- In saucepan, combine corn syrup, sugar and butter or margarine.
- Bring to boiling.
- Boil gently, uncovered, 5 minutes. Stir occasionally.
- Cool slightly.
- Prepare and roll cut pastry. Line a 9-inch pie plate with pastry.
- Flute edge; do not prick pastry.
- Place pecans in pastry shell.
- Combine eggs, vanilla and salt.
- Pour cooled syrup mixture into eggs and beat well.
- Pour over nuts (pecans will rise to top).
- Bake in 375° oven for 30 to 35 minutes or until knife inserted near center comes out clean. Cool before serving.
- Cover; chill to store.
