Ingredients

  • 1 1/2 c. light corn syrup
  • 1/2 c. sugar
  • 1/4 c. butter or margarine
  • pastry for single crust pie
  • 1 c. pecan halves
  • 3 slightly beaten eggs
  • 1 tsp. vanilla
  • dash of salt

Method

  • In saucepan, combine corn syrup, sugar and butter or margarine.
  • Bring to boiling.
  • Boil gently, uncovered, 5 minutes. Stir occasionally.
  • Cool slightly.
  • Prepare and roll cut pastry. Line a 9-inch pie plate with pastry.
  • Flute edge; do not prick pastry.
  • Place pecans in pastry shell.
  • Combine eggs, vanilla and salt.
  • Pour cooled syrup mixture into eggs and beat well.
  • Pour over nuts (pecans will rise to top).
  • Bake in 375° oven for 30 to 35 minutes or until knife inserted near center comes out clean. Cool before serving.
  • Cover; chill to store.
