Ingredients

  • 3 whole Ripe Bananas, Mashed
  • 1 cup Brown Sugar
  • 1/2 cups Butter
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • 1/8 teaspoons Ground Cloves
  • 1/4 teaspoons Ginger
  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 cup Pecans, Chopped

Method

  • Heat oven to 350°F.
  • Crush bananas and set aside.
  • Beat brown sugar and butter. Beat in egg, vanilla, cloves and ginger. Add crushed banana and mix well. Add flour and baking soda and beat well. Stir in crushed pecans.
  • Grease muffin tins or use paper muffin liners. Fill to the top.
  • Bake at 350°F for 18-20 minutes or until toothpick inserted in center comes out clean.
