Ingredients
- 1 lb. frozen peas, boiled
- 1 onion, diced
- 1 green pepper, diced
- salt and pepper to taste
- 1/2 tsp. oregano
- 4 eggs
- 2 ripe tomatoes, sliced
- cooking oil
Method
- Place oil in a large frying pan and saute onion, green pepper, tomato and spices.
- Add peas and simmer.
- When mixture is heated through, evenly break eggs onto peas and fry sunny side up.
- Ready to eat when eggs are done.
- Nicely topped with grated cheese, if desired.
