Ingredients
- 1 lb. orange roughy fillets
- 1/2 c. milk
- 4 oz. salted peanuts, finely chopped
- 1/4 c. flour
- 2 Tbsp. butter
Method
- Cut fillets into serving size pieces.
- Combine peanuts and flour.
- Dip fish into milk, then into flour mixture, coating well. Heat butter in pan.
- Place fish in pan and cook for 6 to 8 minutes, turning once. (If using frozen fillets, allow an extra 3 minutes.)
- Drain.
- Serve immediately with salad or vegetable.
