Ingredients
- 1 lb. cubed chicken
- 4 tsp. cornstarch
- 2 Tbsp. soy sauce
- 1 tsp. sugar
- 3 Tbsp. sherry
- 3 Tbsp. oleo
- 2 onions, sliced
- 1/2 tsp. red pepper, crushed
- 1/2 c. salted peanuts
- 2 c. cooked rice
Method
- Blend 3 teaspoons cornstarch and 1 tablespoon soy sauce.
- Add chicken.
- Chill for 1 hour.
- Blend sugar, 1 teaspoon cornstarch, sherry and rest of soy sauce; set aside.
- Melt oleo in wok or skillet.
- Add chicken mixture.
- Stir-fry until chicken is done, about 3 minutes.
- Add onions and pepper.
- Stir-fry until onions are clear.
- Stir in sherry mixture.
- Cook until thickened.
- Stir in peanuts.
- Serve over rice.
