Ingredients

  • 1 lb. cubed chicken
  • 4 tsp. cornstarch
  • 2 Tbsp. soy sauce
  • 1 tsp. sugar
  • 3 Tbsp. sherry
  • 3 Tbsp. oleo
  • 2 onions, sliced
  • 1/2 tsp. red pepper, crushed
  • 1/2 c. salted peanuts
  • 2 c. cooked rice

Method

  • Blend 3 teaspoons cornstarch and 1 tablespoon soy sauce.
  • Add chicken.
  • Chill for 1 hour.
  • Blend sugar, 1 teaspoon cornstarch, sherry and rest of soy sauce; set aside.
  • Melt oleo in wok or skillet.
  • Add chicken mixture.
  • Stir-fry until chicken is done, about 3 minutes.
  • Add onions and pepper.
  • Stir-fry until onions are clear.
  • Stir in sherry mixture.
  • Cook until thickened.
  • Stir in peanuts.
  • Serve over rice.
