Ingredients

  • oil
  • 1 small onion, chopped
  • 2 garlic cloves, crushed, or 1/4 tsp. garlic powder
  • 3 pinches cumin
  • 1 can double strength chicken broth
  • 1 c. milk
  • 1/2 c. bread crumbs
  • 2 to 3 Tbsp. peanut butter
  • 4 shakes turmeric
  • salt and pepper to taste
  • 2 to 3 boneless chicken breasts, cut into 1 to 2-inch chunks (may use pork loin)
  • long grain rice
  • 2 large potatoes, cut into 1 1/2-inch chunks

Method

  • Cook onion, garlic and cumin over low heat until cooked and soft.
  • Add chicken broth and 1/2 cup milk.
  • Moisten bread crumbs in remaining milk; let sit for 5 minutes.
  • Stir into onion mixture.
  • Add peanut butter, turmeric, salt and pepper.
  • Cook and stir until sauce is smooth and thick.
