Ingredients

  • 2 tbs Peanut flour (or 1 tablespoon peanut butter, which would add about 60 calories)
  • 1/4 tsp Vanilla extract
  • 2-4 pkts Stevia (or sweetener of choice to taste)
  • 1/2 cup Low fat cottage cheese (or plain low-fat Greek yogurt)
  • For the Crust: 1 graham cracker square, crushed fine (This is optional)
  • 3 WWP+*

Method

  • To make the peanut butter cheesecake mousse, place everything in a food processor and blend/mix for about 2-3 minutes, or until cottage cheese reaches an airy-mousse like consistency. (If you are using Greek yogurt, use a hand held electric mixer, and mix on high speed for about 2 minutes to whip the yogurt to an airy mousse like consistency.)
  • To assemble the mousse with a 'pie crust', place crushed graham cracker in a small serving glass, and pour cheesecake mousse on top. Serve immediately, or cover and chill in the fridge!
