Ingredients

  • 1 c. powdered sugar
  • 1/2 c. chunky peanut butter
  • 1/4 c. cornstarch
  • 1/2 tsp. salt, divided
  • 3 eggs, separated
  • 1/2 tsp. vanilla
  • 1/4 c. sugar
  • 2 c. milk
  • 2 Tbsp. butter
  • 1 Tbsp. peanut butter
  • 3 Tbsp. sugar

Method

  • Mix powdered sugar and peanut butter.
  • Place 2/3 of mixture in bottom of baked pie shell, called "crumbs".
  • In a saucepan, combine cornstarch, 1/4 teaspoon salt, egg yolks, vanilla, sugar, milk, butter and peanut butter.
  • Cook over medium heat until thick, stirring constantly.
  • Pour over crumbs.
  • Beat together 3 egg whites, 1/4 teaspoon salt and 3 tablespoons sugar until stiff. Pour over pie.
  • Sprinkle on rest of crumbs.
  • Bake for 20 minutes at 325°.
