- 1 c. powdered sugar
- 1/2 c. chunky peanut butter
- 1/4 c. cornstarch
- 1/2 tsp. salt, divided
- 3 eggs, separated
- 1/2 tsp. vanilla
- 1/4 c. sugar
- 2 c. milk
- 2 Tbsp. butter
- 1 Tbsp. peanut butter
- 3 Tbsp. sugar
Method
- Mix powdered sugar and peanut butter.
- Place 2/3 of mixture in bottom of baked pie shell, called "crumbs".
- In a saucepan, combine cornstarch, 1/4 teaspoon salt, egg yolks, vanilla, sugar, milk, butter and peanut butter.
- Cook over medium heat until thick, stirring constantly.
- Pour over crumbs.
- Beat together 3 egg whites, 1/4 teaspoon salt and 3 tablespoons sugar until stiff. Pour over pie.
- Sprinkle on rest of crumbs.
- Bake for 20 minutes at 325°.
