Ingredients
- 5 lb. beef roast (solid piece preferred)
- 6 bay leaves
- 3 garlic cloves, sliced
- 6 green peppers, quartered
- 1 Tbsp. fennel seed
- oregano
- 1 garlic clove, chopped
- olive oil
Method
- Place roast on foil; arrange bay leaves and garlic slices on and around the meat.
- Salt and pepper to taste.
- Insert meat thermometer in thickest part.
- Seal foil and place in roasting pan.
- Roast at 325° to medium rare.
- Cool and refrigerate overnight, saving pan juices.
