Ingredients

  • 1 cup Old Fashioned Rolled Oats (gluten-free If Necessary)
  • 1/2 cups Unsweetened Shredded Coconut
  • 1/2 cups Natural Peanut Butter (if Not Salted, Add A Pinch Of Salt)
  • 1/2 teaspoons Vanilla Extract
  • 18 teaspoons Ground Ginger
  • 3 Tablespoons Raw Honey (or Agave/maple Syrup To Make It Vegan)

Method

  • Add oats and coconut into a food processor and pulse until just combined.
  • Add the rest of the ingredients to the food processor and process on high until a smooth dough is formed, stopping to scrape down the sides of the bowl as necessary.
  • Once dough consistency is reached, break into bite-sized pieces, roll into balls, put the balls on a plate and refrigerate for 20 minutes or so to harden (or pop into you mouth immediately!)
