Ingredients
- 2 c. sugar
- 2 1/2 c. peanuts
- 1 tsp. water
- 1 c. light corn syrup
- 1/2 tsp. soda
- 1 tsp. vanilla
Method
- Combine sugar and syrup in Dutch oven; cook over low heat until candy thermometer registers 300°.
- Remove from heat; stir in soda, water and vanilla.
- Spread mixture onto a warm buttered 15 x 10-inch jelly roll pan.
- Allow peanut brittle to cool; break into pieces.
- Yields about 2 pounds.
