Ingredients

  • 1 c. sugar
  • 1/2 c. white corn syrup
  • 1 c. roasted peanuts
  • 1 tsp. vanilla extract
  • 1 tsp. butter
  • 1 tsp. baking soda

Method

  • In 1 1/2-quart casserole, stir together sugar and syrup. Microwave on High for 4 minutes.
  • Stir in peanuts.
  • Microwave on High for 3 minutes until light brown.
  • Add butter and vanilla, blending well.
  • Microwave on High for 1 1/2 minutes.
  • Peanuts will be lightly browned and syrup will be hot.
  • Add baking soda and stir until light and foamy.
  • Pour mixture into nonstick coated cookie sheet.
  • Spread as thin as desired.
  • Let cool 1/2 to 1 hour. Break into small pieces and store in airtight container.
