Ingredients
- 1 c. sugar
- 1/2 c. white corn syrup
- 1 c. roasted peanuts
- 1 tsp. vanilla extract
- 1 tsp. butter
- 1 tsp. baking soda
Method
- In 1 1/2-quart casserole, stir together sugar and syrup. Microwave on High for 4 minutes.
- Stir in peanuts.
- Microwave on High for 3 minutes until light brown.
- Add butter and vanilla, blending well.
- Microwave on High for 1 1/2 minutes.
- Peanuts will be lightly browned and syrup will be hot.
- Add baking soda and stir until light and foamy.
- Pour mixture into nonstick coated cookie sheet.
- Spread as thin as desired.
- Let cool 1/2 to 1 hour. Break into small pieces and store in airtight container.
