Ingredients
- 3 lbs pork loin
- 3 cups chopped fresh peaches
- 1 cup orange marmalade (fruit only)
- 3 teaspoons lemon juice
- 34 teaspoon ground ginger
- 34 teaspoon dry mustard
- 14 teaspoon ground cinnamon
- 14 cup low sodium soy sauce
Method
- Preheat oven to 350 degrees.
- In a small bowl, mix together peaches, marmalade, lemon juice, ginger, mustard, cinnamon and soy sauce.
- Place pork in medium baking dish; glaze pork with peach mixture, using it all.
- Roast in oven for approximately one and a half hours; serve.
