Ingredients

  • 3 lbs pork loin
  • 3 cups chopped fresh peaches
  • 1 cup orange marmalade (fruit only)
  • 3 teaspoons lemon juice
  • 34 teaspoon ground ginger
  • 34 teaspoon dry mustard
  • 14 teaspoon ground cinnamon
  • 14 cup low sodium soy sauce

Method

  • Preheat oven to 350 degrees.
  • In a small bowl, mix together peaches, marmalade, lemon juice, ginger, mustard, cinnamon and soy sauce.
  • Place pork in medium baking dish; glaze pork with peach mixture, using it all.
  • Roast in oven for approximately one and a half hours; serve.
