Ingredients

  • 1 cup frozen blueberries, thawed
  • 13 cup grape fruit spread
  • 1 cup apricot, canned,chopped and drained
  • 13 cup apricot fruit spread
  • 1 cup peach nectar
  • 1 cup water
  • 2 vanilla beans, split lengthwise
  • 3 large peaches, peeled,pitted,and sliced
  • 2 cups vanilla ice cream

Method

  • Combine blueberries and grape fruit spread in container of an electric blender; cover and process until smooth.
  • Strain puree; discard skins.
  • Cover and chill.
  • Combine apricots and apricot fruit spread in container of electric blender; cover and process until smooth.
  • Strain puree; discard pulp.
  • Cover and chill.
  • Combine nectar, water, and vanilla beans in a nonstick skillet.
  • Bring to a boil; add peaches.
  • Cover, reduce heat, and simmer 10 minutes or until tender.
  • Let cool; cover and chill.
  • Remove peaches from liquid; arrange on serving plates.
  • Top each with about 1/3 cup ice cream.
  • Spoon purees around ice cream.
  • Serve immediately.
