Ingredients

  • 1/2 stick butter, melted
  • 2 c. graham cracker crumbs
  • 4 c. peeled peaches, sliced
  • sugar
  • pinch of salt
  • 2 heaping Tbsp. cornstarch
  • 1 c. water
  • 1/2 pkg. peach gelatin
  • 1 (8 oz.) pkg. cream cheese
  • 1/2 c. milk
  • 1 carton whipped topping

Method

  • Make crust of butter and graham cracker crumbs.
  • Reserve 1/2 cup for topping.
  • Put in a 9 x 9 x 3-inch pan.
  • Put scant 1/2 cup of sugar in peaches; set aside.
  • Mix 3/4 cup sugar, salt, cornstarch and water; cook until clear and thick.
  • Add gelatin and dissolve.
  • Allow to cool, then add peaches.
  • Beat cream cheese with 1/2 cup sugar.
  • Gradually add milk; continue to beat.
  • Fold in topping.
  • Put 1/2 cream cheese mixture over crust.
  • Add peaches.
  • Top with remaining cream cheese mixture.
  • Sprinkle with reserved crumbs.
