Ingredients

  • 1 (16 oz.) can peach slices
  • 3/4 c. flour
  • 1/2 tsp. salt
  • 3 Tbsp. butter or margarine
  • 1/2 c. milk
  • 1 tsp. baking powder
  • 1 (3 1/8 oz.) pkg. instant vanilla pudding mix
  • 1 egg
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1/2 c. plus 1 Tbsp. sugar
  • 1/2 tsp. ground cinnamon

Method

  • Drain peach slices, reserving 3 tablespoons juice.
  • Combine flour, salt, butter, milk, baking powder, vanilla pudding mix and egg.
  • Beat 2 minutes at medium speed with electric mixer.
  • Pour into ungreased 9-inch pie plate.
  • Arrange peach slices over batter.
  • Beat cream cheese until smooth.
  • Add 1/2 cup sugar and reserved peach juice.
  • Spoon mix over peaches, leaving 1-inch margin around side of dish.
