- 1 (16 oz.) can peach slices
- 3/4 c. flour
- 1/2 tsp. salt
- 3 Tbsp. butter or margarine
- 1/2 c. milk
- 1 tsp. baking powder
- 1 (3 1/8 oz.) pkg. instant vanilla pudding mix
- 1 egg
- 1 (8 oz.) pkg. cream cheese, softened
- 1/2 c. plus 1 Tbsp. sugar
- 1/2 tsp. ground cinnamon
Method
- Drain peach slices, reserving 3 tablespoons juice.
- Combine flour, salt, butter, milk, baking powder, vanilla pudding mix and egg.
- Beat 2 minutes at medium speed with electric mixer.
- Pour into ungreased 9-inch pie plate.
- Arrange peach slices over batter.
- Beat cream cheese until smooth.
- Add 1/2 cup sugar and reserved peach juice.
- Spoon mix over peaches, leaving 1-inch margin around side of dish.
