Ingredients
- 6 cups of chopped peaches
- 3 cups of sugar
- 1/2 lemon juiced and zested
- 1/2 tablespoon pectin
Method
- Combine peaches, sugar, lemon, zest
- Allow to sit 30 minutes
- Simmer for 20-30 minutes until peaches are very tender
- Remove peaches and add pectin
- Boil the syrup to 220F
- Remove from heat and pour on top of peaches
- Taste syrup and add more lemon juice if desired
