Ingredients

  • 9-inch pie shell
  • 3 c. sliced ripe peaches
  • 2 Tbsp. lemon juice
  • 3/4 c. sugar
  • 3 Tbsp. cornstarch
  • 2 Tbsp. butter
  • 1/4 tsp. almond flavoring

Method

  • Bake and cool pie shell, completely cooled. Let peaches, lemon juice and sugar stand until juice forms. Drain and save juice. If the drained juice is not enough to make a full cup, add enough 7-Up to make a full cup. Add juice and cornstarch. Cook until thick. Add butter and almond flavoring. Let completely cool before pouring over peaches. Pour into cold pie shell and top with Cool Whip.
