Ingredients

  • 1 c. granulated sugar
  • 1 stick butter, at room temperature
  • 2 eggs
  • 1 c. flour
  • 1 Tbsp. almond extract
  • 1 large can sliced peaches or 8 to 10 fresh peaches, peeled and sliced
  • sugar to taste
  • 1 Tbsp. vanilla extract
  • 1 Tbsp. coconut extract
  • 1 Tbsp. almond extract
  • 1 Tbsp. cinnamon
  • 1 Tbsp. nutmeg
  • about 1 Tbsp. cornstarch, mixed with 1/2 c. water

Method

  • Mix all ingredients together; put in pan.
  • Take the batter which has been set aside and pour or spoon over peach mixture. Bake until golden brown approximately 40 minutes until top is brown and liquid is bubbling.
  • Test with a toothpick to see that cake portion is not gummy.
