Ingredients
- 1 lb. sage seasoned pork sausage
- 1 large onion, finely chopped
- 2 eggs, slightly beaten
- 1 1/2 c. self-rising cornmeal
- 1 (17 oz.) can cream-style corn
- 3/4 c. milk
- 1/4 c. vegetable oil
- 2 c. grated Cheddar cheese
Method
- Brown sausage and onion; drain well.
- Combine eggs, cornmeal, corn, milk and vegetable oil.
- Pour half of mixture into a greased 9-inch square pan.
- Sprinkle with sausage mixture and grated cheese.
- Pour remaining batter over sausage and cheese.
- Bake at 425° for 30 to 35 minutes.
- Remove from oven to cool 10 minutes before serving.
- Yield: 8 to 10 servings.
