Ingredients

  • 1 lb. sage seasoned pork sausage
  • 1 large onion, finely chopped
  • 2 eggs, slightly beaten
  • 1 1/2 c. self-rising cornmeal
  • 1 (17 oz.) can cream-style corn
  • 3/4 c. milk
  • 1/4 c. vegetable oil
  • 2 c. grated Cheddar cheese

Method

  • Brown sausage and onion; drain well.
  • Combine eggs, cornmeal, corn, milk and vegetable oil.
  • Pour half of mixture into a greased 9-inch square pan.
  • Sprinkle with sausage mixture and grated cheese.
  • Pour remaining batter over sausage and cheese.
  • Bake at 425° for 30 to 35 minutes.
  • Remove from oven to cool 10 minutes before serving.
  • Yield: 8 to 10 servings.
