Ingredients

  • 8 ounces of Linguine Pasta
  • 3 Zucchinis
  • 2 Small Onions
  • 1 Packet of Saffron
  • 3 Tablespoons of Creme de Fraiche
  • 3 Tablespoons of Cream Cheese
  • 1 Ounce of Grated Parmesan
  • Extra Virgin Olive Oil

Method

  • Cut the zucchinis into small slices
  • Cut the onions into slices
  • Combine the zucchinis and onions into a saucepan with olive oil and cook until tender
  • Cook the linguine as directed on package
  • Mix the cream cheese, saffron, creme de fraiche, and parmesan
  • Then add 1/2 cup of boiling water to the mixture to thin it
  • Combine the pasta with the zucchini and onions
  • Finally add the cheese mixture and mix all together, serve immediately
