Ingredients
- 8 ounces of Linguine Pasta
- 3 Zucchinis
- 2 Small Onions
- 1 Packet of Saffron
- 3 Tablespoons of Creme de Fraiche
- 3 Tablespoons of Cream Cheese
- 1 Ounce of Grated Parmesan
- Extra Virgin Olive Oil
Method
- Cut the zucchinis into small slices
- Cut the onions into slices
- Combine the zucchinis and onions into a saucepan with olive oil and cook until tender
- Cook the linguine as directed on package
- Mix the cream cheese, saffron, creme de fraiche, and parmesan
- Then add 1/2 cup of boiling water to the mixture to thin it
- Combine the pasta with the zucchini and onions
- Finally add the cheese mixture and mix all together, serve immediately
