- 4 slices bacon, cut in 1/2-inch strips
- 2 cloves garlic, minced
- 6 oz. mushrooms, sliced
- 6 scallions, sliced
- 1 lb. finely shredded spinach
- 2 large tomatoes, peeled and chopped
- 1/4 c. minced fresh parsley
- salt and pepper
- 12 oz. fettuccini noodles
- 1 c. whipping cream
- Parmesan cheese
Method
- In a heavy pan over moderate heat, cook bacon until fat runs. Add garlic and mushrooms and cook until they begin to lose their juices.
- Stir in scallions, spinach, tomatoes and parsley with salt and pepper.
- Cover pan and simmer gently for 10 minutes.
