Ingredients

  • 4 slices bacon, cut in 1/2-inch strips
  • 2 cloves garlic, minced
  • 6 oz. mushrooms, sliced
  • 6 scallions, sliced
  • 1 lb. finely shredded spinach
  • 2 large tomatoes, peeled and chopped
  • 1/4 c. minced fresh parsley
  • salt and pepper
  • 12 oz. fettuccini noodles
  • 1 c. whipping cream
  • Parmesan cheese

Method

  • In a heavy pan over moderate heat, cook bacon until fat runs. Add garlic and mushrooms and cook until they begin to lose their juices.
  • Stir in scallions, spinach, tomatoes and parsley with salt and pepper.
  • Cover pan and simmer gently for 10 minutes.
