Ingredients

  • 300 g orrechiette pasta, cooked, drained and cooled
  • red onion
  • Kalamata olives
  • KRAFT Basil and Herb Pasta Salad Dressing
  • rocket leaves
  • 600 g orange sweet potato, peeled and cut into 2cm cubes
  • Olive oil spray

Method

  • PLACE the sweet potato on a paper lined baking tray, spray with oil and bake at 180oC for 20-25 minutes or until tender.
  • Allow to cool slightly.
  • COMBINE the pasta with the sweet potato, red onion and olives in a serving bowl.
  • Drizzle with the dressing and toss through.
  • Top with rocket leaves.
  • Serve immediately.
  • HANDY TIP: Sweet Potato is also known as kumera.
  • It can be used in place of regular potato and baked.
  • It's delicious added to soups, pies and curries.
