Ingredients
- 1/2 large box pasta (any type), cooked al dente
- 1/2 c. Parmesan cheese
- 1 (12-inch) smoked sausage, thinly sliced
- 1 c. sliced red onion
- 1 c. sliced green onion
- 3 Tbsp. butter
- 1 clove garlic
- salt and pepper to taste
- 1 c. heavy cream
Method
- Cook sausage until browned.
- Remove to plate and clean grease from pan.
- Add butter to pan.
- When melted, saute onion, green pepper and garlic until crisp-tender.
- Add cream and cook until reduced and thickened.
- Add pasta, salt and pepper and toss to mix.
- Add Parmesan cheese and toss.
- Serve with more cheese on top; crusty bread and Chianti.
