Ingredients

  • 1/2 large box pasta (any type), cooked al dente
  • 1/2 c. Parmesan cheese
  • 1 (12-inch) smoked sausage, thinly sliced
  • 1 c. sliced red onion
  • 1 c. sliced green onion
  • 3 Tbsp. butter
  • 1 clove garlic
  • salt and pepper to taste
  • 1 c. heavy cream

Method

  • Cook sausage until browned.
  • Remove to plate and clean grease from pan.
  • Add butter to pan.
  • When melted, saute onion, green pepper and garlic until crisp-tender.
  • Add cream and cook until reduced and thickened.
  • Add pasta, salt and pepper and toss to mix.
  • Add Parmesan cheese and toss.
  • Serve with more cheese on top; crusty bread and Chianti.
