Ingredients

  • 1 lb. ground beef
  • 1 large onion, diced
  • 1 large green pepper, chopped
  • 2 cans (8 oz.) tomatoes
  • 3/4 c. uncooked rice
  • 2 tsp. chili powder
  • salt to taste

Method

  • Heat oven to 350°.
  • In a 10-inch skillet, cook and stir meat, onion and green pepper until meat is brown and vegetables are tender.
  • Drain off fat.
  • Stir in remaining ingredients; heat thoroughly.
  • Pour into ungreased 2-quart casserole.
  • Cover and bake until rice is tender, 30 to 35 minutes.
