Ingredients

  • 1/2 c. margarine
  • 3/4 c. firmly packed light brown sugar
  • 1 egg
  • 2 tsp. grated lemon rind
  • 1 1/2 Tbsp. lemon juice
  • 1 1/2 c. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • vegetable cooking spray

Method

  • Cream margarine; gradually add sugar, beating until light and fluffy.
  • Add egg, lemon rind and lemon juice, beating well. Combine flour, soda and salt; add to creamed mixture, mixing just until blended.
  • Drop dough by rounded teaspoonful, about 2 inches apart, on cookie sheets coated with cooking spray.
  • Bake at 400° for 8 to 10 minutes.
  • Remove from cookie sheet immediately and cool on wire rack.
  • Yields 3 1/2 dozen (about 49 calories each).
