Ingredients

  • 1/2 lb. shrimp (optional)
  • 4 turkey sausage (10 1/2 oz.) sweet Italian type, sliced or in chunks
  • 1/4 lb. mushrooms (about 12), sliced
  • 2 garlic cloves, finely minced or crushed
  • 1 small onion, chopped
  • 2 oz. smoked Mozzarella cheese, grated
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 2 Tbsp. olive oil
  • 1 medium tomato, cubed
  • 1 lb. pasta, fresh multi-colored if possible

Method

  • In 1 tablespoon olive oil, saute onions, garlic and mushrooms, then add turkey sausage, basil and oregano.
  • Cook until lightly browned.
  • Add peeled shrimp and cook 3 to 5 minutes longer until shrimp are pink.
