- 1 Tbsp. oil
- 2 medium onions, chopped
- 2 minced garlic cloves
- 3 lb. ground beef chuck
- 2 Tbsp. chili powder
- 1/2 tsp. oregano
- 1 tsp. salt
- 1/2 c. dark rum (Bacardi)
- 1 (6 oz.) can tomato paste
- 1 (1 lb. 12 oz.) can tomatoes
- 3 (16 oz.) cans kidney beans, drained
Method
- Heat oil in 8 to 10-quart kettle.
- Lightly saute onions and garlic.
- Add meat, breaking up and stirring with wooden spoon until color changes.
- Add remaining ingredients.
- Stir.
- Cover and simmer 2 hours.
- Makes about 10 servings.
