Ingredients
- 1/2 head romaine cut up
- 1/2 head iceburg cut up
- 1/4 c thin sliced red onion
- 1/4 c cut up pitted black olives
- 1/4 c crumbled feta cheese
- Toss all together
Method
- Sherry wine vinegrette:
- 1/2c olive oil
- 1/2 c salad oil
- 1/4 c sherry or white wine
- 1 chopped shallot
- 1 tsp salt
- 1/4 t pepper
- Shake all and add 1 T fresh tarragon or 1 t dried and 1 T chives. serve immediately or store for 1 week.
