Ingredients

  • 2 tbs olive oil, divided, plus more for brushing onto bread
  • 1 zucchini, cut lengthwise, into 1/4" slices
  • 2 yellow squash, cut lengthwise, into 1/4" slices
  • 1 onion, cut crosswisem into 1/4" slices
  • 3 roma tomatoes, stem removed and cut lengthwise into 1/4" slices
  • Salt and pepper
  • 8 slices whole wheat bread
  • 4 oz cheddar, sliced

Method

  • Place the vegetables in a large bowl. Drizzle 1 tbs olive oil over the vegetables, season with salt and pepper. Toss until all vegetables are coated.
  • Heat a grill pan or frying pan over medium-high heat. In batches, grill the vegetables until soft, about 3 minutes on each side. Set aside.
  • Brush one side of each bread slice with oil. lay the slices, oiled side down, on a clean work surface. For each sandwich, layer the vegetables onto one piece of the bread, then top with cheese. Repeat with the other bread slice, oiled side up. Repeat until all sandwiches are assembled.
  • Grill each sandwich over medium high until golden and the cheese is melted, about 2 minutes per side. Slice in half and serve immediately.
