Ingredients

  • 1 whole Medium Onion, Thinly Sliced
  • 1 Tablespoon Oil
  • 3 cloves Garlic, Chopped
  • 2 whole Eggs, Lightly Beaten
  • 1 can (6 Oz. Size) Crab Meat Or 3/4 Cup Fresly Cooked Crab Meat
  • 1 Tablespoon Oyster Sauce
  • 2 Tablespoons Thin Soy Sauce
  • 1 teaspoon Sugar
  • 1- 1/2 cup Cooked Jasmine Or Long Grain Rice
  • 1 whole Spring Onion, Chopped
  • 1 pinch Pepper
  • 1/2 whole Lemon Or Lime, Cut Into Wedges, To Serve
  • 1 whole Medium Tomato Or Cucumber, Sliced, To Serve
  • 2 Tablespoons Coriander Leaves, For Garnish

Method

  • Fry onion in oil, in a wok over medium high heat for 1 or 2 minutes.
  • Add garlic and turn until fragrant.
  • Add eggs to one side and spread over the surface until half-cooked, then stir to combine with onion and garlic.
  • Add crab meat, oyster sauce, soy sauce and sugar.
  • Stir well and cook for further 2 minutes before adding rice.
  • Turn to combine; taste your rice and add more seasoning if needed.
  • Add chopped spring onion and pepper.
  • Remove from heat.
  • Serve with a wedge of lime or lemon and sliced tomato or cucumber.
  • Garnish with coriander leaves.
