Ingredients

  • 10 medium to large tomatoes
  • 1/4 c. virgin olive oil
  • 1/4 c. fresh cracked black pepper
  • 2 Tbsp. coarse salt
  • 1 Tbsp. minced garlic
  • 1 small red onion, diced
  • 1/4 c. fresh chopped basil
  • 1/4 c. capers
  • 1/4 c. virgin olive oil
  • 1/4 c. balsamic vinegar
  • salt and pepper to taste

Method

  • Core tomatoes and cut in half. Combine next four ingredients to make a pepper rub. Coat tomatoes with pepper rub and bake at 190° on a rack. Mix remaining ingredients and combine with roughly chopped tomatoes to make relish.
