- 10 medium to large tomatoes
- 1/4 c. virgin olive oil
- 1/4 c. fresh cracked black pepper
- 2 Tbsp. coarse salt
- 1 Tbsp. minced garlic
- 1 small red onion, diced
- 1/4 c. fresh chopped basil
- 1/4 c. capers
- 1/4 c. virgin olive oil
- 1/4 c. balsamic vinegar
- salt and pepper to taste
Method
- Core tomatoes and cut in half. Combine next four ingredients to make a pepper rub. Coat tomatoes with pepper rub and bake at 190° on a rack. Mix remaining ingredients and combine with roughly chopped tomatoes to make relish.
