Ingredients
- 6 small boneless chicken breasts
- 4 oz. thin sliced ham
- 3/4 c. shredded Swiss cheese
- 3 c. corn flakes, crushed (about 1 1/2 c.)
- 2 Tbsp. snipped parsley
- 1/4 c. buttermilk
Method
- Flatten each chicken breast half to 1/4-inch thickness between waxed paper.
- Divide ham and Swiss cheese among chicken breasts. Roll each chicken breast up and secure with a wooden pick.
- Mix corn flakes, parsley and paprika.
- Dip chicken into buttermilk. Coat evenly with corn flake mixture.
- Place chicken, seam sides down, in greased square pan (9 x 9 x 2-inch).
- Bake, uncovered, in 425° oven for 35 minutes; remove wooden picks.
- Makes 6 servings.
