Ingredients

  • 6 small boneless chicken breasts
  • 4 oz. thin sliced ham
  • 3/4 c. shredded Swiss cheese
  • 3 c. corn flakes, crushed (about 1 1/2 c.)
  • 2 Tbsp. snipped parsley
  • 1/4 c. buttermilk

Method

  • Flatten each chicken breast half to 1/4-inch thickness between waxed paper.
  • Divide ham and Swiss cheese among chicken breasts. Roll each chicken breast up and secure with a wooden pick.
  • Mix corn flakes, parsley and paprika.
  • Dip chicken into buttermilk. Coat evenly with corn flake mixture.
  • Place chicken, seam sides down, in greased square pan (9 x 9 x 2-inch).
  • Bake, uncovered, in 425° oven for 35 minutes; remove wooden picks.
  • Makes 6 servings.
